Made only in the summer, this Alpine Gruyere has a fruity and complex floral character, due to the cows grazing purely on Summer Alpine pasture. The milk is also heated over a wood fire, lending an occasional smoky note. A very specialist cheese, only two wheels are made each day. Extra mature, with an intensified flavour, and a slightly dusty rind. 2023 was a great year for this cheese and it is delicious.
We select cheese mostly only from one cheesemaker that we have been buying from since 2006 (unless there is a shortage).
